  • 8 ounces macaroni
  • 1 pound shrimp, peeled and deveined
  • Salt and pepper (to taste)
  • 12 teaspoons Creole seasoning
  • 3 tablespoons unsalted butter
  • 1 small onion, minced
  • 23 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 12 ounces evaporated milk
  • 1 cup whole milk
  • ¾ cup broth or milk
  • ½ cup grated mozzarella
  • ½ cup grated Parmesan
  • 1 cup grated sharp cheddar cheese (divided)

Instructions

  1. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  2. Season the shrimp with salt, pepper, and Creole seasoning.
  3. In a cast iron skillet, melt the butter over medium heat. Add the shrimp and cook until they start to turn pink; remove from pan.
  4. Sauté the onion and garlic in the same skillet until softened.
  5. Whisk in flour until absorbed; cook for another minute.
  6. Gradually add evaporated milk, whole milk, and broth while stirring continuously until thickened.
  7. Stir in mozzarella, Parmesan, and half of the cheddar until melted; adjust seasonings as needed.
  8. Combine cooked macaroni with cheese sauce; transfer to a greased baking dish. Top with remaining cheddar and shrimp.
  9. Bake at 375°F for 10–15 minutes or until golden brown.
