  • ¾ pound large shrimp (peeled and deveined)
  • 5 tablespoons unsalted butter
  • 1 teaspoon sesame oil
  • 12 ounces shiitake mushrooms (cleaned and sliced)
  • ½ cup white grape juice
  • 1½ tablespoons dark soy sauce
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon brown sugar
  • Red pepper flakes to taste
  • Green onions for garnish

Instructions

  1. Cook noodles according to package instructions, reserving 1½ cups of pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat. Add shrimp seasoned with salt and pepper; cook until pink and golden brown (about 1 to 2 minutes per side). Transfer to a plate.
  3. In the same skillet, melt butter with sesame oil. Sauté shallots and garlic until softened.
  4. Add shiitake mushrooms; cook until lightly browned (about 5 minutes).
  5. Deglaze the skillet with white grape juice, stirring to lift browned bits.
  6. Stir in dark soy sauce, low-sodium soy sauce, brown sugar, red pepper flakes, and reserved pasta water; simmer for 3 minutes.
  7. Toss cooked noodles into the skillet along with shrimp; mix well and garnish with green onions.
