  • 2 large avocados
  • 12 cooked shrimp
  • 34 tbsp sweet chili sauce
  • 1 fresh mango
  • 1 red onion
  • 1 red chili (optional)
  • Juice of 1 lime
  • Extra virgin olive oil
  • Fresh coriander/cilantro
  • Salt and black pepper

Instructions

  1. In a mixing bowl, marinate cooked shrimp in sweet chili sauce for about 10 minutes.
  2. Scoop out most of the avocado flesh from each half, leaving a thin layer attached.
  3. In another bowl, combine diced avocado, mango, red onion, red chili (if using), lime juice, olive oil, salt, and pepper. Mix well.
  4. Season the remaining avocado halves with salt and pepper.
  5. Fill each avocado half with the mango salsa mixture and top with marinated shrimp.
