- 2 large avocados
- 12 cooked shrimp
- 3–4 tbsp sweet chili sauce
- 1 fresh mango
- 1 red onion
- 1 red chili (optional)
- Juice of 1 lime
- Extra virgin olive oil
- Fresh coriander/cilantro
- Salt and black pepper
Instructions
- In a mixing bowl, marinate cooked shrimp in sweet chili sauce for about 10 minutes.
- Scoop out most of the avocado flesh from each half, leaving a thin layer attached.
- In another bowl, combine diced avocado, mango, red onion, red chili (if using), lime juice, olive oil, salt, and pepper. Mix well.
