  • Fresh beef, thinly sliced
  • Chinese cabbage or your choice of leafy green
  • Garlic, minced
  • White onion, sliced
  • Sesame oil
  • Soy sauce
  • Dark soy sauce
  • Chinese white rice vinegar
  • Fresh ground black pepper

Instructions

  1. Marinate the beef by mixing minced garlic, sesame oil, soy sauce, dark soy sauce, Chinese white rice vinegar, and cornstarch slurry in a bowl. Coat the beef and let it marinate for 10 minutes.
  2. Boil udon noodles in water for 1–2 minutes until slightly loosened; drain and set aside.
  3. Combine dark soy sauce, fresh ground black pepper, water, and potato starch in a small bowl to prepare the sauce.
  4. In a wok over medium heat, stir-fry minced garlic and sliced onions until soft. Add marinated beef and cook until browned.
  5. Pour in the prepared black pepper sauce and stir until thickened. Add cooked udon noodles and cabbage; toss gently to combine.
