  • 1 lb ground beef
  • 1 cup matchstick carrots
  • 1 red bell pepper (sliced)
  • 23 green onions (chopped)
  • 3 garlic cloves (minced)
  • 1/2 cup low sodium soy sauce
  • 1/2 cup brown sugar
  • 1 3/4 cups beef stock
  • 2 packets dry ramen noodles
  • Sesame seeds (for garnish)

Instructions

  1. Brown the ground beef in a skillet over medium-high heat, breaking it apart with a wooden spoon. Add minced garlic and cook for 2 more minutes.
  2. Transfer the beef and garlic to the slow cooker. Add matchstick carrots, bell pepper slices, and chopped green onions (reserve some for garnish).
  3. In a mixing bowl, combine low sodium soy sauce, brown sugar, and beef stock; pour over the ingredients in the slow cooker.
  4. Set on low heat and cook for 4 to 6 hours.
  5. About 30 minutes before serving, add dry ramen noodles directly into the slow cooker.
  6. Stir gently before serving and garnish with sesame seeds and reserved green onions.
