Ingredients
- 1 lb ground beef
- 1 cup matchstick carrots
- 1 red bell pepper (sliced)
- 2–3 green onions (chopped)
- 3 garlic cloves (minced)
- 1/2 cup low sodium soy sauce
- 1/2 cup brown sugar
- 1 3/4 cups beef stock
- 2 packets dry ramen noodles
- Sesame seeds (for garnish)
Instructions
- Brown the ground beef in a skillet over medium-high heat, breaking it apart with a wooden spoon. Add minced garlic and cook for 2 more minutes.
- Transfer the beef and garlic to the slow cooker. Add matchstick carrots, bell pepper slices, and chopped green onions (reserve some for garnish).
- In a mixing bowl, combine low sodium soy sauce, brown sugar, and beef stock; pour over the ingredients in the slow cooker.
- Set on low heat and cook for 4 to 6 hours.
- About 30 minutes before serving, add dry ramen noodles directly into the slow cooker.
- Stir gently before serving and garnish with sesame seeds and reserved green onions.
