  • 3 pounds bone-in chicken thighs
  • Salt and pepper
  • Olive oil
  • 1 medium yellow onion, diced
  • 6 cloves garlic, minced
  • 4 medium carrots, sliced
  • 1 ½ tablespoons tomato paste
  • 2 teaspoons fresh thyme leaves
  • ½ teaspoon fresh rosemary, minced
  • 3 medium red potatoes, quartered
  • 3 bay leaves
  • 5 cups chicken broth
  • ⅓ cup all-purpose flour
  • 1 cup frozen peas
  • ¼ cup finely chopped Italian parsley

Instructions

  1. Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat and sear chicken until golden brown. Transfer to the slow cooker.
  2. In the same skillet, sauté onions and carrots for about 5 minutes until softened. Add garlic, thyme, rosemary, and tomato paste; deglaze with a splash of broth.
  3. Transfer sautéed vegetables to the slow cooker with chicken. Add potatoes, bay leaves, remaining broth (about 4 cups), and season again.
  4. Cover and cook on HIGH for about four hours.
  5. Three hours in, create a slurry by mixing flour with cold broth; stir into the stew along with frozen peas.
  6. Shred cooked chicken once tender and return to the pot. Stir in parsley and adjust seasoning before serving.
