- 2 teaspoons fresh thyme leaves
- ½ teaspoon fresh rosemary, minced
- 3 medium red potatoes, quartered
- 3 bay leaves
- 5 cups chicken broth
- ⅓ cup all-purpose flour
- 1 cup frozen peas
- ¼ cup finely chopped Italian parsley
Instructions
- Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat and sear chicken until golden brown. Transfer to the slow cooker.
- In the same skillet, sauté onions and carrots for about 5 minutes until softened. Add garlic, thyme, rosemary, and tomato paste; deglaze with a splash of broth.
- Transfer sautéed vegetables to the slow cooker with chicken. Add potatoes, bay leaves, remaining broth (about 4 cups), and season again.
- Cover and cook on HIGH for about four hours.
- Three hours in, create a slurry by mixing flour with cold broth; stir into the stew along with frozen peas.
- Shred cooked chicken once tender and return to the pot. Stir in parsley and adjust seasoning before serving.
