  • 2 lbs boneless, skinless chicken thighs (cut into 12 inch pieces)
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons lime juice
  • 1/4 cup orange juice
  • 1 tablespoon lime zest
  • 2 tablespoons sesame oil
  • 1 20oz can pineapple chunks (with juice)
  • 1 red bell pepper (chunked)
  • 1 yellow bell pepper (chunked)
  • 1/3 cup brown sugar
  • 1/3 cup hoisin sauce
  • 4 tablespoons orange juice (for thickening)
  • 2 tablespoons cornstarch

Instructions

  1. Sear the Chicken: Heat sesame oil in a skillet over high heat. Sear chicken pieces in batches until browned on all sides, about 5 minutes per side.
  2. Prepare the Slow Cooker: Place seared chicken in the slow cooker. Top with pineapple chunks and juice, followed by bell peppers.
  3. Mix the Sauce: In a bowl, combine soy sauce, lime juice, orange juice, lime zest, brown sugar, hoisin sauce, garlic, ginger, and optional red pepper flakes. Pour over chicken and vegetables.
  4. Cook: Cover and cook on LOW for 7 to 8 hours or HIGH for 3 to 4 hours until chicken is fully cooked.
  5. Thicken Sauce: In the last half hour, mix cornstarch with orange juice until dissolved and stir into the slow cooker.
  6. Serve: Once thickened, serve warm with rice or vegetables and garnish with green onions and sesame seeds.
