  • 1 white onion (diced)
  • 4 cloves garlic (minced)
  • 2 tsp Italian seasoning
  • 6 cups chicken stock
  • 23 boneless skinless chicken breasts (about 1 pound)
  • 1/2 cup sundried tomatoes (chopped)
  • 1 cup heavy cream
  • 4 cups fresh spinach
  • 8 oz broken lasagna noodles (cooked separately)

Instructions

  1. In a slow cooker, combine diced onion, minced garlic, Italian seasoning, salt, black pepper, and crushed red pepper flakes.
  2. Pour in the chicken stock and mix well.
  3. Place the chicken breasts on top of the vegetable mixture.
  4. Sprinkle chopped sundried tomatoes over the chicken.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender.
  6. Shred the chicken using two forks and return it to the slow cooker.
  7. In a bowl, whisk together heavy cream and cornstarch until smooth; stir into the soup.
  8. Cook on high for an additional 30 minutes to thicken slightly.
  9. Stir in fresh spinach until wilted.
  10. Just before serving, add cooked lasagna noodles to the soup.
