Ingredients
- 2 lbs baby potatoes (or any small potatoes)

Instructions
Step 1: Boil the Potatoes
- Place the potatoes in a large pot and cover them with water.
- Add a pinch of salt and bring to a boil over high heat.
- Reduce the heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender.
- Drain the potatoes and set aside to cool slightly.
Step 2: Preheat the Oven
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper or lightly grease it with oil.
Step 3: Smash the Potatoes
- Place the boiled potatoes on the prepared baking sheet, spaced evenly.
- Use a fork or potato masher to gently smash each potato until it’s about half an inch thick. Don’t worry if they crack a little; that will help them crisp up in the oven.
Step 4: Prepare the Garlic Herb Mixture
- In a small bowl, combine the olive oil (or melted butter), minced garlic, rosemary, and thyme.
- Drizzle the garlic herb mixture evenly over the smashed potatoes, making sure to coat each one generously.
- Season with salt and pepper to taste.
Step 5: Roast the Potatoes
- Roast the smashed potatoes in the preheated oven for 25-30 minutes, or until they are golden and crispy on the edges.
- If you want them extra crispy, you can broil them for an additional 2-3 minutes at the end of cooking.
Step 6: Serve and Garnish
- Once the potatoes are roasted, remove them from the oven and sprinkle with fresh parsley and grated Parmesan cheese (if using).
