  • 3 pounds ground chuck
  • 10 ounces pepper jack cheese (cubed)
  • 1/2 cup mayonnaise
  • 1 tablespoon Worcestershire sauce
  • 2 sweet onions (chopped)
  • Cajun seasoning mix

Instructions

  1. Make the Cajun sauce by mixing mayonnaise, Worcestershire sauce, lemon juice, black pepper, garlic powder, smoked paprika, and Tony’s Lite Creole Seasoning in a bowl. Refrigerate until needed.
  2. Prepare the Cajun burger rub by combining garlic powder, onion powder, smoked paprika, black pepper, and Tony’s seasoning in another bowl.
  3. In a large bowl, mix ground chuck with pepper jack cheese cubes and Tony’s marinade. Form into patties and freeze for 20 minutes.
  4. Caramelize onions in butter over medium heat until golden brown.
  5. Smoke the patties at 250-275°F for about 30-40 minutes, adding cheese toward the end.
  6. Assemble the burgers on toasted buns with Cajun sauce and caramelized onions.
