Ingredients

  • 1 lb ribeye or sirloin steak (cut into bite-sized cubes)
  • 1 tbsp olive oil
  • 1 lb Velveeta cheese (cubed)
  • 6 oz sharp cheddar cheese
  • 8 oz pepper jack cheese
  • 10 oz can Rotel tomatoes with green chilies, undrained
  • ½ cup heavy cream
  • ½ cup diced white onion
  • ½ cup cooked chicken chicken chorizo (optional)
  • 4 oz can pickled jalapeños
  • Spice rub of your choice
  • Cumin and chili powder

Instructions

  1. Preheat your smoker or cast iron skillet over medium heat. Season the cubed steak with olive oil and spice rub.
  2. Cook the seasoned steak cubes for about 6–8 minutes until browned on all sides. Set aside.
  3. In a separate pot, combine Velveeta, cheddar, pepper jack, Rotel tomatoes, heavy cream, onion, chicken chicken chorizo (if using), jalapeños, cumin, chili powder, and additional spice rub.
  4. Heat the queso mixture over low heat while stirring continuously until smooth and melted. Adjust thickness by adding more cream if needed.
  5. Fold in the cooked steak bites and warm together for another few minutes.
  6. Serve hot with tortilla chips or fresh veggies.
