Ingredients
- 1 lb ribeye or sirloin steak (cut into bite-sized cubes)
- 1 tbsp olive oil
- 1 lb Velveeta cheese (cubed)
- 6 oz sharp cheddar cheese
- 8 oz pepper jack cheese
- 10 oz can Rotel tomatoes with green chilies, undrained
- ½ cup heavy cream
- ½ cup diced white onion
- ½ cup cooked chicken chicken chorizo (optional)
- 4 oz can pickled jalapeños
- Spice rub of your choice
- Cumin and chili powder
Instructions
- Preheat your smoker or cast iron skillet over medium heat. Season the cubed steak with olive oil and spice rub.
- Cook the seasoned steak cubes for about 6–8 minutes until browned on all sides. Set aside.
- In a separate pot, combine Velveeta, cheddar, pepper jack, Rotel tomatoes, heavy cream, onion, chicken chicken chorizo (if using), jalapeños, cumin, chili powder, and additional spice rub.
