- 1 carrot (chopped)
- 2 cups corn kernels (fresh or frozen – divided)
- 3 garlic cloves (minced)
- 3 tbsp arrowroot starch (or cornstarch)
- 1 tsp sea salt
- 1/2 tsp ground black pepper
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- 2 tbsp tomato paste
- 2 cups chicken broth
- 1 cup coconut milk
- 1 lb chicken (cooked and shredded)
Instructions
- Heat ghee in a large Dutch oven over medium heat until melted.
- Add onion, celery, carrot, and 1/2 cup corn; sauté until tender (about 2–3 minutes). Stir in minced garlic and arrowroot starch; cook for an additional minute.
- Mix in salt, black pepper, paprika, thyme, and tomato paste until well combined.
- Gradually pour in chicken broth while stirring; simmer for about 3 minutes until slightly thickened.
- Blend the mixture until smooth using an immersion blender or countertop blender.
- Stir in coconut milk and heat until the mixture simmers again.
- Add remaining corn and shredded chicken; simmer for another 4–5 minutes until heated through.
