  • 1/2 onion (minced)
  • 1 rib celery (chopped)
  • 1 carrot (chopped)
  • 2 cups corn kernels (fresh or frozen – divided)
  • 3 garlic cloves (minced)
  • 3 tbsp arrowroot starch (or cornstarch)
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 2 tbsp tomato paste
  • 2 cups chicken broth
  • 1 cup coconut milk
  • 1 lb chicken (cooked and shredded)

Instructions

  1. Heat ghee in a large Dutch oven over medium heat until melted.
  2. Add onion, celery, carrot, and 1/2 cup corn; sauté until tender (about 2–3 minutes). Stir in minced garlic and arrowroot starch; cook for an additional minute.
  3. Mix in salt, black pepper, paprika, thyme, and tomato paste until well combined.
  4. Gradually pour in chicken broth while stirring; simmer for about 3 minutes until slightly thickened.
  5. Blend the mixture until smooth using an immersion blender or countertop blender.
  6. Stir in coconut milk and heat until the mixture simmers again.
  7. Add remaining corn and shredded chicken; simmer for another 4–5 minutes until heated through.
  8. Adjust seasoning if needed before serving hot.
