  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar (for frosting)
  • 3 1/4 cups powdered sugar

Instructions

  1. In a large bowl, cream together softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until light and fluffy.
  2. In another bowl, whisk together all-purpose flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually mix dry ingredients into the wet mixture until just combined; do not overmix.
  4. Chill the dough in the refrigerator for at least 30 minutes.
  5. Preheat your oven to 350°F (177°C).
  6. Scoop out dough and flatten slightly on a parchment-lined baking sheet.
  7. Bake for 10–12 minutes; allow cookies to cool completely on the sheet.
  8. For frosting, whip together softened vegan butter, vanilla paste, cinnamon, pumpkin pie spice, brown sugar, and powdered sugar until smooth.
