  • 150 grams shrimp (peeled and deveined)
  • 2 eggs (whisked and seasoned with salt)
  • 50 grams green peas (about ½ cup)
  • 1 carrot (diced)
  • ½ onion (diced)
  • 2 cloves garlic (finely chopped)
  • 23 spring onions (sliced)
  • 23 tbsp cooking oil
  • 1 tsp soy sauce
  • 1 tsp grape juice
  • 1 tsp corn starch
  • ¼ tsp white pepper powder
  • 2 tbsp soy sauce
  • 1 tsp chicken powder
  • 1 tsp sesame oil

Instructions

  1. Gather all ingredients, ensuring rice is cold for best results. Chop vegetables and proteins into small pieces.
  2. Heat one tablespoon of oil in a wok over medium heat, add whisked eggs, scramble until fully cooked, then remove.
  3. Add another tablespoon of oil to the wok; sauté onion and garlic until fragrant.
  4. Stir-fry diced carrots, green peas, chicken, and shrimp for about three to four minutes until shrimp are pink.
  5. Add cold cooked rice and scrambled eggs; mix gently to combine.
  6. Pour in soy sauce, grape juice, chicken powder, white pepper powder, sesame oil, and corn starch; stir thoroughly.
  7. Sprinkle sliced spring onions over the top before serving hot.
