  • 34 lbs whole chicken (cut into pieces)
  • 2 quarts full-fat buttermilk
  • 1/2 cup hot sauce
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3 large eggs
  • 1 teaspoon garlic powder
  • 1 tablespoon Kosher salt
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cayenne pepper
  • 1 tablespoon white pepper
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons chili powder
  • 2 teaspoons celery salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme

Instructions

  1. In a large resealable bag, combine buttermilk, hot sauce, sliced onions, garlic, salt, and peppercorns. Add chicken pieces and seal the bag. Marinate in the refrigerator for 6–12 hours.
  2. Mix all spices in a small bowl for seasoning.
  3. After marinating, remove chicken from the bag; shake off excess marinade and season both sides with half of the spice blend.
  4. In a separate bowl, combine flour and the remaining seasoning mix.
  5. Dip each chicken piece in beaten eggs mixed with buttermilk and then coat thoroughly in the flour mixture.
  6. Heat oil in a deep Dutch oven to 350°F (175°C). Fry chicken pieces in batches until cooked through (dark meat: 16-20 min; white meat: 13-16 min).
  7. Drain on paper towels before serving.
