- 3–4 lbs whole chicken (cut into pieces)
- 2 quarts full-fat buttermilk
- 1/2 cup hot sauce
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 3 large eggs
- 1 teaspoon garlic powder
- 1 tablespoon Kosher salt
- 1 tablespoon onion powder
- 1 tablespoon smoked paprika
- 1 tablespoon ground cayenne pepper
- 1 tablespoon white pepper
- 2 teaspoons freshly ground black pepper
- 2 teaspoons chili powder
- 2 teaspoons celery salt
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
Instructions
- In a large resealable bag, combine buttermilk, hot sauce, sliced onions, garlic, salt, and peppercorns. Add chicken pieces and seal the bag. Marinate in the refrigerator for 6–12 hours.
- Mix all spices in a small bowl for seasoning.
- After marinating, remove chicken from the bag; shake off excess marinade and season both sides with half of the spice blend.
- In a separate bowl, combine flour and the remaining seasoning mix.
- Dip each chicken piece in beaten eggs mixed with buttermilk and then coat thoroughly in the flour mixture.
- Heat oil in a deep Dutch oven to 350°F (175°C). Fry chicken pieces in batches until cooked through (dark meat: 16-20 min; white meat: 13-16 min).
- Drain on paper towels before serving.
