Ingredients
- 12 lasagna noodles
- 10 ounces frozen chopped spinach
- 1 egg
- 15 ounces ricotta cheese
- 8 ounces shredded mozzarella cheese (divided)
- ½ cup grated Parmesan cheese
- 25 ounces marinara sauce
- Salt and black pepper to taste
Instructions
- Boil a large pot of salted water and cook lasagna noodles until al dente. Drain and cool on parchment paper.
- Thaw spinach in a microwave-safe bowl; squeeze out excess moisture.
- Preheat oven to 350°F.
- In a mixing bowl, combine beaten egg, spinach, ricotta, 7 ounces of mozzarella, Parmesan, salt, and pepper.
