  • 3 tablespoons minced fresh ginger
  • 2 medium cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon agave nectar
  • 1/4 cup rice grape juice vinegar
  • 1 tablespoon sesame oil
  • 1/4 cup shredded cabbage (green or purple)
  • 1 small cucumber, julienned
  • 2 small carrots, julienned
  • 1 medium sweet pepper, julienned
  • Fresh herbs (cilantro and mint)
  • Chopped roasted peanuts

Instructions

  1. Cook the rice noodles according to package instructions until tender; drain and rinse with cold water.
  2. In a mixing bowl, whisk together minced ginger, garlic, soy sauce, agave nectar, rice grape juice vinegar, sesame oil, and red pepper flakes. Season with salt and pepper.
  3. In a large bowl, combine cooked noodles with shredded cabbage, cucumber, carrots, sweet pepper, cilantro, and mint.
  4. Pour the dressing over the salad mixture and toss gently until well coated.
