Description

  • 1.5 pounds beef stew meat
  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 2 pounds russet potatoes (peeled & diced)
  • 1 tablespoon all-purpose flour
  • 3 cups chicken stock
  • 1 cup cheddar cheese (freshly grated)
  • 3/4 cup heavy cream

Instructions

  1. Prep your ingredients by dicing the onion, mincing the garlic, and peeling and dicing the potatoes.
  2. In a large pot or Dutch oven, heat a little oil over medium-high heat. Add beef stew meat and sear until browned on all sides. Remove from pot and set aside.
  3. In the same pot, add diced onions and cook until softened. Add minced garlic and sauté until fragrant.
  4. Sprinkle flour over the mixture and stir for one minute before adding chicken stock.
  5. Return the diced potatoes and seared beef to the pot; do not worry about complete submersion.
  6. Bring to a gentle simmer, cover with a lid, and cook on low heat for about an hour until beef is tender.
  7. Stir in heavy cream and cheddar cheese until melted; taste for seasoning adjustments before serving.
