- 1 medium yellow onion (diced)

- 2 pounds russet potatoes (peeled & diced)
- 1 tablespoon all-purpose flour
- 3 cups chicken stock
- 1 cup cheddar cheese (freshly grated)
- 3/4 cup heavy cream
Instructions
- Prep your ingredients by dicing the onion, mincing the garlic, and peeling and dicing the potatoes.
- In a large pot or Dutch oven, heat a little oil over medium-high heat. Add beef stew meat and sear until browned on all sides. Remove from pot and set aside.
- In the same pot, add diced onions and cook until softened. Add minced garlic and sauté until fragrant.
- Sprinkle flour over the mixture and stir for one minute before adding chicken stock.
- Return the diced potatoes and seared beef to the pot; do not worry about complete submersion.
- Bring to a gentle simmer, cover with a lid, and cook on low heat for about an hour until beef is tender.
- Stir in heavy cream and cheddar cheese until melted; taste for seasoning adjustments before serving.
