  • 4 tablespoons unsalted butter (divided)
  • 1 cup warm whole milk
  • Salt and pepper (to taste)
  • 2 cups beef broth
  • 1/3 cup Worcestershire sauce
  • 12 tablespoons garlic paste
  • 1 tablespoon lemon zest
  • Juice of 1/2 lemon
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 tablespoons Dijon mustard
  • 1 stick unsalted butter
  • 3 tablespoons all-purpose flour
  • Caramelized onions (for garnish)
  • Chopped chives (for garnish)

Instructions

  1. Season the beef cubes with SPG seasoning and avocado oil; refrigerate while preparing other components.
  2. Boil cubed potatoes in salted water until fork-tender (15-20 minutes). Drain, mash with butter, warm milk, salt, and pepper until creamy.
  3. Caramelize onions by cooking sliced onions in butter over medium heat until golden brown (20-30 minutes).
  4. In a saucepan, combine beef broth, garlic paste, lemon zest, lemon juice, herbs, Dijon mustard, and butter; simmer for 15 minutes before straining.
  5. Create the gravy by melting butter in a pan, whisking in flour to form a roux; gradually add au jus until thickened.
