  • 2 ½ tablespoons olive oil
  • 2 pounds thinly sliced beef
  • 1 packet taco seasoning
  • 3 tablespoons water
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 small sweet onion (sliced)
  • 1 tablespoon minced garlic
  • 1 cup shredded Colby Jack cheese
  • 6 large flour tortillas

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet and sauté the red and green bell peppers along with the sweet onion until the onion is translucent. Add minced garlic and cook until fragrant. Remove from heat.
  2. In the same skillet, add another 1 ½ tablespoons of olive oil over medium-high heat. Cook the sliced beef until desired doneness. Sprinkle taco seasoning and water over the beef; stir to combine with sautéed veggies.
  3. Place a tortilla in a clean skillet. On one half, add ¼ cup beef mixture, followed by veggies and cheese. Fold the tortilla to enclose the filling.
  4. Cook each quesadilla for about 2 minutes on each side or until golden brown and cheese melts.
  5. Repeat until all ingredients are used. Slice into triangles and serve with salsa, guacamole, sour cream, cilantro, and lime wedges.
