Ingredients
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream (cold)
For the Strawberry Crunch Topping:
- 1 cup crushed Golden Oreos (about 10–12 cookies)
- 1/4 cup freeze-dried strawberries, crushed
- 2 tablespoons melted butter
For the Cones:
- 6–8 waffle cones (or sugar cones, if preferred)
- Fresh strawberries (sliced, for garnish)
- White chocolate (melted, optional for dipping the cones)
Instructions
Step 1: Prepare the Strawberry Crunch Topping
- In a food processor, pulse the Golden Oreos and freeze-dried strawberries until they form a coarse crumb mixture. (Alternatively, place them in a ziplock bag and crush them with a rolling pin.)
- Transfer the crumbs to a bowl and mix in the melted butter until well combined. This will create a crunchy, flavorful topping.
- Set the strawberry crunch topping aside.
Step 2: Make the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the powdered sugar and vanilla extract, and continue to beat until fully combined.
- In a separate bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy. Be careful not to overmix to maintain the airy texture.
Step 3: Prep the Cones (Optional)
- If desired, dip the rims of the waffle cones in melted white chocolate and then into the strawberry crunch topping for an extra layer of flavor and crunch.
- Allow the chocolate to set before filling the cones.
Step 4: Assemble the Cheesecake Cones
- Transfer the cheesecake filling into a piping bag (or a ziplock bag with the tip cut off).
- Pipe the cheesecake filling into each waffle cone, filling it generously.
- Dip the top of each filled cone into the strawberry crunch topping, pressing lightly to ensure the crumbs stick.
- Garnish with fresh strawberry slices on top for a burst of color and flavor.
Step 5: Serve and Enjoy
- Serve the Strawberry Crunch Cheesecake Cones immediately for the best crunch and flavor.
- If making ahead, store them upright in the refrigerator for up to 2 hours to keep the cones from getting soggy.
