- ½ cup pure maple syrup or honey
- ¼ cup milk (your choice)
- 1 teaspoon vanilla extract
- 2 eggs
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup white whole wheat flour
Instructions
- Preheat the oven to 375°F (190°C) and prepare a muffin tin with cooking spray or liners.
- Toss chopped strawberries with ¼ cup of all-purpose flour in a bowl.
- In a microwave-safe bowl, melt butter. Add applesauce (or banana/yogurt), maple syrup (or honey), milk, vanilla extract, and eggs; whisk until combined.
