  • ¼ cup all-purpose flour

  • ½ cup pure maple syrup or honey
  • ¼ cup milk (your choice)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup white whole wheat flour

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin with cooking spray or liners.
  2. Toss chopped strawberries with ¼ cup of all-purpose flour in a bowl.
  3. In a microwave-safe bowl, melt butter. Add applesauce (or banana/yogurt), maple syrup (or honey), milk, vanilla extract, and eggs; whisk until combined.
  4. Stir in baking powder, baking soda, and salt. Then mix in white whole wheat flour and remaining all-purpose flour until just combined.
  5. Gently fold in floured strawberries.
  6. Fill muffin wells about three-quarters full and bake for 16–18 minutes until a tester comes out clean.
  7. Cool in the pan for five minutes before transferring to a wire rack.
