  • 16 oz fresh strawberries (hulled and sliced)
  • 2 Tbsp orange juice
  • 3 Tbsp granulated sugar
  • ¼ cup strawberry preserves
  • 4 large egg yolks
  • 1⅓ cups heavy whipping cream
  • 16 oz mascarpone cheese (room temperature)
  • ½ Tbsp orange zest
  • 1 tsp vanilla extract
  • 24 crispy ladyfingers

Instructions

  1. Prepare the strawberries by hulking and slicing them, then mix with orange juice and sugar. Let sit for about 15 minutes.
  2. In a separate bowl, whip the heavy cream until soft peaks form.
  3. Whisk egg yolks and sugar together until pale; fold in mascarpone cheese, vanilla extract, and orange zest.
  4. Gently combine the whipped cream into the mascarpone mixture in three additions.
  5. In a baking dish, layer strawberry preserves at the bottom, dip ladyfingers briefly in the macerated strawberry juices, and layer half over preserves.
  6. Spread half of the mascarpone mixture over ladyfingers, followed by another layer of dipped ladyfingers and remaining mascarpone.
  7. Cover with plastic wrap and refrigerate for at least 8 hours or overnight.
  8. Before serving, garnish with fresh strawberries.
