Ingredients
- 2 medium delicata squash
- olive oil
- salt and pepper
- ¾ cup uncooked quinoa (rinsed well)
- ½ cup chopped red onion
- 1 clove garlic (minced)
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 8-ounce can tomato sauce
- ¼ cup water
- 15-ounce can black beans (rinsed and drained)
- ¼ cup fresh cilantro
- 1 cup grated cheddar cheese
- additional cilantro or cheddar cheese for serving (if desired)
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the delicata squashes in half lengthwise and scoop out the seeds. Drizzle olive oil over the cut sides and season with salt and pepper.
- In a medium saucepan, combine rinsed quinoa with 1½ cups of water. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed.
- In a mixing bowl, combine cooked quinoa, chopped red onion, minced garlic, chili powder, cumin, tomato sauce, black beans, and fresh cilantro. Mix well.
- Fill each squash half with the quinoa mixture and top with grated cheddar cheese.
- Place stuffed squashes in a baking dish covered with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until cheese is golden brown.
- Garnish with extra cilantro or cheese before serving hot.
