  • 1 lb ground chicken or turkey
  • 1 lb ground beef
  • 1 yellow onion, diced
  • 56 green bell peppers, chopped
  • 67 garlic cloves, minced
  • 28 oz can crushed tomatoes
  • (2) 14.5 oz cans fire-roasted diced tomatoes
  • 2 tbsp tomato paste
  • (2) 10.5 oz packages frozen riced cauliflower (cooked and drained)
  • Assorted spices: garlic powder, onion powder, dried oregano, dried basil, white sugar

Instructions

  1. In a large pot or Dutch oven, brown the ground chicken or turkey and ground beef with diced onion, bell peppers, and minced garlic over medium heat until fully cooked.
  2. Drain any excess grease from the pot. Stir in the tomato paste and cook for about 3 minutes to deepen the flavor.
  3. Add crushed tomatoes, fire-roasted diced tomatoes, bouillon if using, water, and cooked riced cauliflower. Mix well.
  4. Allow the soup to simmer on low heat for 45 minutes to an hour for flavors to meld together.
