Ingredients

  • jumbo pasta shells
  • olive oil
  • garlic
  • spinach
  • Ricotta cheese
  • Parmesan cheese
  • mozzarella cheese
  • cream cheese
  • egg
  • marinara sauce
  • fresh parsley
  • Italian seasoning (basil, oregano, parsley)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil salted water in a large pot and cook the jumbo pasta shells until just under al dente (about 12 minutes). Drain and cool under cold water.
  3. In a skillet, heat olive oil over medium heat, sauté minced garlic for one minute, then add spinach until wilted. Let cool.
  4. In a mixing bowl, combine ricotta, half of the mozzarella, most of the Parmesan, cream cheese, egg, and seasonings; mix well. Fold in the cooled spinach.
  5. Spread half of the marinara sauce in a casserole dish. Fill each shell with the cheese mixture and place in the dish. Top with remaining marinara sauce and cheeses.
  6. Cover with foil and bake for 20 minutes; uncover and bake an additional 10 minutes until golden.
