- 1 1/2 cups All-purpose flour
- 1/2 tsp Salt
- 1/2 cup Unsalted butter (room temperature)

- 5 TBSP Milk
- 1/3 cup Christmas sprinkles (jimmies)
- 32 oz Cream cheese (room temperature)
- 2/3 cup Regenerative Organic Certified® Cane Sugar from Wholesome
- 3/4 cup Sour cream (room temperature or greek yogurt)
- 1/2 cup Heavy cream (room temperature)
- 1 tsp Pure vanilla extract
- 4 Large eggs (room temperature)
- 2/3 Cookie dough balls
- 1 cup White chocolate chips
- 1/3 cup Heavy cream
Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the sugar cookie crust by mixing flour, baking soda, and salt in one bowl, and creaming together butter and sugar in another. Combine both mixtures and fold in sprinkles before pressing into a greased 9-inch springform pan.
- Make the cookie dough balls by mixing flour and salt, creaming butter and sugar, then adding milk and sprinkles. Form small balls from the dough.
- For the cheesecake filling, beat cream cheese until smooth, mix in sugars, sour cream, and heavy cream. Add eggs one at a time, gently folding in cookie dough balls.
- Pour the filling over the crust and bake for approximately 80 minutes until set but slightly jiggly.
- Cool completely at room temperature before chilling for at least four hours.
- Prepare ganache by heating heavy cream and pouring it over white chocolate chips until smooth; drizzle over chilled cheesecake before serving.
