- 2 chicken breasts (boneless, skinless)
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 garlic clove, minced
- 1 cup jasmine rice (or long-grain white rice)
- 2 cups chicken broth
- 1/2 cup pineapple chunks (fresh or canned, drained)
- 1/4 cup soy sauce (or tamari for gluten-free)
- 1 tablespoon honey or maple syrup
- 1 teaspoon ground ginger (optional, for extra flavor)
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- 1/2 red bell pepper, diced (optional, for added color and crunch)
Instructions
Step 1: Prepare the Chicken
- Season the chicken breasts with salt, pepper, and ground ginger (if using).
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken breasts and cook for 5-6 minutes on each side until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
Step 2: Sauté the Onion and Garlic
- In the same skillet, add the diced onion and garlic. Sauté for 2-3 minutes until softened and fragrant.
Step 3: Cook the Rice
- Add the jasmine rice to the skillet and stir for 1-2 minutes to toast the rice slightly.
- Pour in the chicken broth, soy sauce, and honey (or maple syrup). Stir to combine, and bring to a simmer.
Step 4: Add Pineapple and Simmer
- Stir in the pineapple chunks and red bell pepper (if using).
- Cover the skillet and reduce the heat to low. Let it simmer for about 15-18 minutes, or until the rice is fully cooked and the liquid has been absorbed.
Step 5: Finish the Dish
- While the rice is cooking, slice the cooked chicken into thin strips.
- Once the rice is ready, fluff it with a fork and gently fold in the sliced chicken.
Step 6: Garnish and Serve
- Garnish with freshly chopped cilantro for a burst of flavor and color.
