  • 2 chicken breasts (boneless, skinless)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 cup jasmine rice (or long-grain white rice)
  • 2 cups chicken broth
  • 1/2 cup pineapple chunks (fresh or canned, drained)
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon ground ginger (optional, for extra flavor)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • 1/2 red bell pepper, diced (optional, for added color and crunch)

Instructions

Step 1: Prepare the Chicken

  • Season the chicken breasts with salt, pepper, and ground ginger (if using).
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken breasts and cook for 5-6 minutes on each side until golden brown and fully cooked. Remove the chicken from the skillet and set aside.

Step 2: Sauté the Onion and Garlic

  • In the same skillet, add the diced onion and garlic. Sauté for 2-3 minutes until softened and fragrant.

Step 3: Cook the Rice

  • Add the jasmine rice to the skillet and stir for 1-2 minutes to toast the rice slightly.
  • Pour in the chicken broth, soy sauce, and honey (or maple syrup). Stir to combine, and bring to a simmer.

Step 4: Add Pineapple and Simmer

  • Stir in the pineapple chunks and red bell pepper (if using).
  • Cover the skillet and reduce the heat to low. Let it simmer for about 15-18 minutes, or until the rice is fully cooked and the liquid has been absorbed.

Step 5: Finish the Dish

  • While the rice is cooking, slice the cooked chicken into thin strips.
  • Once the rice is ready, fluff it with a fork and gently fold in the sliced chicken.

Step 6: Garnish and Serve

  • Garnish with freshly chopped cilantro for a burst of flavor and color.
  • Serve warm and enjoy!

  • Chicken Alternative: Feel free to use chicken thighs for a juicier option. You can also substitute the chicken with tofu or another protein of choice.
