Ingredients

For the Cauliflower:
1 large head of cauliflower, cut into bite-sized florets
2 tbsp olive oil
½ tsp salt
½ tsp garlic powder
¼ tsp black pepper

For the Sweet and Spicy Sauce:
2 tbsp honey
1 tbsp soy sauce (low sodium)
1 tbsp sriracha or chili garlic sauce (adjust to heat preference)
1 tbsp rice vinegar or apple cider vinegar
1 tbsp tomato paste or ketchup
1 tsp sesame oil
1 tsp cornstarch mixed with 2 tsp water (slurry for thickening)

For Garnish:
1 tbsp sesame seeds
2 tbsp chopped green onions
Lime wedges (optional)


Instructions

Step 1: Prep the Cauliflower
Preheat your oven to 425°F.
Line a baking sheet with parchment paper.
In a large bowl, toss cauliflower florets with olive oil, salt, garlic powder, and black pepper until evenly coated.
Spread the cauliflower on the prepared baking sheet in a single layer.

Step 2: Bake the Cauliflower
Bake for 25-30 minutes, flipping halfway through, until the cauliflower is golden and crisp on the edges.

Step 3: Make the Sweet and Spicy Sauce
While the cauliflower bakes, combine honey, soy sauce, sriracha, vinegar, tomato paste, and sesame oil in a small saucepan over medium heat.
Bring to a simmer, then stir in the cornstarch slurry.
Continue stirring until the sauce thickens, about 2-3 minutes. Remove from heat.

Step 4: Toss and Coat
Once the cauliflower is roasted, transfer it to a large bowl.
Pour the warm sauce over the cauliflower and toss to coat evenly.
Return to the baking sheet and bake for another 5 minutes to caramelize the sauce slightly.

Step 5: Garnish & Serve
Sprinkle with sesame seeds and chopped green onions before serving.
Add a squeeze of lime for extra zing if desired.
Serve hot as a snack, side, or main dish.

Notes

Don’t Overcrowd – Give each floret space for proper browning.
Adjust the Heat – Add more or less chili sauce based on your spice level.
Make It Crispy – Bake on high heat and use parchment for extra crispiness.
Double the Sauce – Keep some on the side for dipping or drizzling.
Go Fresh – Use freshly cut cauliflower rather than pre-packaged for better texture.
