For the Coconut Cream Topping:

  • 1 cup canned coconut cream (chilled overnight)

  • 1 tbsp powdered sugar

  • ½ tsp vanilla extract

Optional Toppings:

  • Toasted coconut flakes

  • Fresh tropical fruits (mango, banana, pineapple)

  • Maple syrup or honey

  • Chopped nuts (like macadamia or almonds)


Instructions

Step 1: Make the Coconut Pancake Batter

  1. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.

  2. In another bowl, whisk the egg, coconut milk, melted butter, and vanilla extract until smooth.

  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined.

  4. Fold in shredded coconut if using. Do not overmix.

Step 2: Cook the Pancakes

  1. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

  2. Pour ¼ cup of batter for each pancake onto the skillet.

  3. Cook for 2-3 minutes, or until bubbles form and the edges begin to set.

  4. Flip and cook for another 1-2 minutes until golden brown.

  5. Transfer to a plate and keep warm. Repeat with remaining batter.

Step 3: Prepare the Coconut Cream Topping

  1. Scoop out the solid coconut cream from the chilled can into a mixing bowl.

  2. Add powdered sugar and vanilla extract.
