For the Focaccia Dough:

  • 2½ cups all-purpose flour

  • 2¼ tsp instant yeast (1 packet)

  • 1 tsp salt

  • 1 tbsp granulated sugar

  • ¾ cup warm water

  • ¼ cup milk (warm)

  • 2 tbsp olive oil (plus extra for greasing and topping)

For the Topping:

  • ½ cup raspberry jam (or your favorite berry jam)

  • 2 tbsp granulated sugar (for sprinkling)

  • 1 tsp lemon zest (optional, for brightness)

  • Extra olive oil for brushing


Instructions

Step 1: Prepare the Dough
In a large bowl, mix the flour, instant yeast, salt, and sugar.
Add warm water, milk, and 2 tbsp olive oil.
Stir until a soft dough forms, then knead in the bowl or on a floured surface for 5-6 minutes until smooth.
Form the dough into a ball and place it in a greased bowl. Cover and let rise for 1 hour, or until doubled in size.

Step 2: Shape and Rest the Dough
Grease a 9×13-inch pan generously with olive oil.
Transfer the risen dough to the pan and gently press it to fill the space.
Cover again and let rest for 20-30 minutes while preheating the oven to 400°F (200°C).

Step 3: Add Jam and Toppings
Using your fingertips, dimple the dough lightly across the surface.
Drop spoonfuls of raspberry jam over the dough, spacing evenly.
Brush the top lightly with olive oil.
Sprinkle granulated sugar evenly across the surface, and add lemon zest if using.

Step 4: Bake the Focaccia
Bake in the preheated oven for 22-25 minutes, or until golden brown and puffed.
Let it cool slightly in the pan before slicing.

 

Step 5: Serve and Enjoy
Cut into squares and serve warm or at room temperature.
Great on its own or paired with a dollop of whipped cream or Greek yogurt.

Notes

Warm Ingredients – Ensure water and milk are warm, not hot, to activate the yeast.
Don’t Over-Jam – Space out the jam to prevent soggy spots.
Add Fruit – Fresh raspberries or blueberries can be dotted alongside the jam.
Use a Light Hand – Avoid pressing too hard when dimpling to keep the dough airy.
Make Ahead – Dough can be made the night before and refrigerated until ready to bake.
