1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 tsp ground cinnamon
½ tsp ground nutmeg
½ cup unsalted butter, melted and cooled
½ cup brown sugar
¼ cup granulated sugar
2 large eggs
1 cup mashed cooked sweet potato (about 1 medium)
¼ cup milk (dairy or plant-based)
1 tsp vanilla extract
For the Cinnamon Swirl:
¼ cup brown sugar
1 tsp ground cinnamon
Optional Add-Ins:
½ cup chopped pecans or walnuts
¼ cup raisins or dried cranberries
½ cup mini chocolate chips
Sprinkle of turbinado sugar on top for crunch
Instructions
Step 1: Prep the Oven and Pan
Preheat your oven to 350°F (175°C).
Grease and line a 9×5 inch loaf pan with parchment paper or non-stick spray.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
Step 3: Mix the Wet Ingredients
In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
Add eggs, mashed sweet potato, milk, and vanilla extract. Stir until well combined.
Step 4: Combine and Swirl
Gradually add the dry ingredients to the wet mixture, stirring just until combined—do not overmix.
In a small bowl, mix the cinnamon swirl ingredients.
Pour half the batter into the loaf pan, sprinkle half the cinnamon swirl mix, and swirl gently with a knife.
Repeat with remaining batter and cinnamon mixture, swirling again on top.
Step 5: Bake the Bread
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use Fresh Sweet Potato – Bake or steam for the best texture and flavor.
Don’t Overmix – Mix just until dry streaks disappear for a tender crumb.
Test with a Toothpick – Insert into the center; it should come out mostly clean.
Cool Before Slicing – Prevents the bread from crumbling.
Add Texture – Nuts or raisins make a delicious variation.
