Ingredients
For the Muffins:
• 1 cup mashed sweet potato (from about 1 medium roasted sweet potato)
• 2 large eggs
• ½ cup vegetable oil or melted coconut oil
• ⅓ cup honey or maple syrup
• ¼ cup brown sugar, packed
• ¼ cup milk (dairy or plant-based)
• 1 tsp vanilla extract
• 1 ½ cups all-purpose flour
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 tsp ground cinnamon
• ¼ tsp ground nutmeg
• ¼ tsp ground ginger (optional, for extra spice)
Optional Add-ins:
• ½ cup chopped pecans or walnuts
• ⅓ cup raisins or dried cranberries

• 2 tbsp rolled oats
• 1 tbsp brown sugar

Instructions
Step 1: Prepare the Sweet Potato

Roast 1 medium sweet potato (prick with a fork and bake at 400°F for 45 minutes or until soft).

Let cool, then scoop out the flesh and mash until smooth. You’ll need 1 cup.
Step 2: Mix Wet Ingredients

In a large mixing bowl, whisk together the mashed sweet potato, eggs, oil, honey (or maple syrup), brown sugar, milk, and vanilla extract until smooth.
Step 3: Add the Dry Ingredients

In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
