- 1/4 cup all-purpose flour
- 1/2 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 lbs chuck roast, cubed
- 2 tablespoons olive oil
- 2 onions, diced
- 2 carrots, chopped
- 1 (28 oz) can Italian diced tomatoes, undrained
- 2 cups beef broth
- 1 1/2 tablespoons Worcestershire sauce
Instructions
- Preheat your oven to 350˚F.
- In a mixing bowl, combine flour, smoked paprika, garlic powder, salt, and pepper. Coat the cubed beef with this mixture.
- Heat olive oil in a large stockpot over medium-high heat. Brown the beef on all sides (about 5-7 minutes) and set aside.
- Lower the heat and sauté the onions and carrots until softened (about 5 minutes).
- Return beef to the pot and add diced tomatoes and broth. Stir in Worcestershire sauce.
- Cover and transfer to the oven; cook for 2 ½ to 3 hours until tender.
- If desired, thicken sauce with cornstarch mixed with water before serving.
