  • 1/4 cup all-purpose flour
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 lbs chuck roast, cubed
  • 2 tablespoons olive oil
  • 2 onions, diced
  • 2 carrots, chopped
  • 1 (28 oz) can Italian diced tomatoes, undrained
  • 2 cups beef broth
  • 1 1/2 tablespoons Worcestershire sauce

Instructions

  1. Preheat your oven to 350˚F.
  2. In a mixing bowl, combine flour, smoked paprika, garlic powder, salt, and pepper. Coat the cubed beef with this mixture.
  3. Heat olive oil in a large stockpot over medium-high heat. Brown the beef on all sides (about 5-7 minutes) and set aside.
  4. Lower the heat and sauté the onions and carrots until softened (about 5 minutes).
  5. Return beef to the pot and add diced tomatoes and broth. Stir in Worcestershire sauce.
  6. Cover and transfer to the oven; cook for 2 ½ to 3 hours until tender.
  7. If desired, thicken sauce with cornstarch mixed with water before serving.
