  • 2 cups shredded chicken (cooked)
  • 110 ounce can Rotel
  • 1 cup black beans (cooked)
  • 1 cup white rice (cooked)
  • ½ cup sweet corn (cooked)
  • 1 package taco seasoning
  • 2 cups colby jack cheese (shredded)
  • chopped avocado
  • diced tomato
  • broken tortilla chips
  • sliced black olives
  • cilantro

Instructions

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine shredded chicken, Rotel, black beans, cooked rice, corn, and taco seasoning. Mix well.
  3. Transfer the mixture into a 9×13 casserole dish and spread evenly.
  4. Sprinkle colby jack cheese generously over the top.
  5. Bake in the preheated oven for about 30 minutes or until the cheese is melted and bubbly.
  6. Remove from the oven and top with crumbled tortilla chips, avocado, diced tomato, and olives.
