  • 1 pound lean ground beef
  • ½ yellow onion (diced)
  • 1 teaspoon minced garlic
  • 1 packet taco seasoning
  • 12-ounce bag frozen corn
  • 14.5-ounce can petite diced tomatoes with green chilies (not drained)
  • 1 cup sour cream
  • 2 cups finely crushed Doritos
  • 3 cups Mexican blend cheese
  • Optional: 1 cup black beans

Instructions

  1. Preheat oven to 350°F.
  2. Spray a 9×13 inch baking dish with nonstick spray.
  3. Crush two cups of Doritos into breadcrumb-sized pieces and set aside one cup of larger chunks for topping.
  4. In a large skillet, cook ground beef and onions over medium heat until browned; drain excess grease.
  5. Stir in minced garlic and cook for an additional minute.
  6. Add corn, taco seasoning, undrained diced tomatoes, and crushed Doritos to the skillet; mix well.
  7. Remove from heat and stir in sour cream and two cups of cheese until evenly combined.
  8. Pour mixture into the baking dish and bake for five minutes until warmed through.
  9. Top with remaining cheese and loosely crushed Doritos; bake for another five minutes until cheese melts.
  10. Let cool slightly before serving; garnish with desired toppings.
