- 4 to 6 medium Russet potatoes
- 1 pound lean ground beef
- 1 packet taco seasoning
- shredded lettuce
- cheddar cheese
- sour cream
- salsa
- guacamole
- green onion
Instructions
- Preheat the oven to 400°F. Wash the potatoes under running water, then pat dry.
- Poke holes in each potato with a fork and wrap them in aluminum foil. Place on a baking sheet and bake for about 1 hour until tender.
- In a large skillet over medium-high heat, brown the ground beef until cooked through. Drain excess fat and add taco seasoning along with the indicated amount of water. Bring to boil, then simmer for about 10 minutes.
- Remove baked potatoes from the oven, unwrap them, and cut a slit on top. Fill each potato with the seasoned beef mixture and top with lettuce, cheese, sour cream, salsa, guacamole, and green onion as desired.
