  • Olive Oil
  • 1 lb Ground Beef
  • 1 Small Onion
  • Taco Seasoning
  • Velveeta Cheese
  • Shredded Pepper Jack Cheese
  • Diced Chilies
  • Evaporated Milk
  • Toppings: Grated Cheese
  • Tomatoes
  • Jalapeños
  • Sour Cream

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with aluminum foil.
  2. Wash potatoes, poke holes with a fork, coat with olive oil, salt, and pepper. Bake for 45 minutes.
  3. Brown ground beef and onion in a skillet. Drain excess fat; add taco seasoning and water. Simmer until thickened.
  4. Melt Velveeta cheese, pepper jack cheese, diced chilies, and evaporated milk in a saucepan until smooth.
  5. Broil baked potatoes for an additional 15 minutes after baking.
