For the Cod:

  • 4 cod fillets (about 6 oz each)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil

For the Coconut Lemon Cream Sauce:

 

  • 1 tablespoon butter or olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup coconut milk (full-fat for a creamy texture)
  • 1/4 cup chicken or vegetable broth
  • Juice of 1 large lemon (about 2 tablespoons)
  • Zest of 1 lemon
  • 1 teaspoon honey or maple syrup (balances the tanginess)
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 2 tablespoons fresh parsley or cilantro, chopped

Instructions

Step 1: Prepare the Cod

  1. Preheat your oven to 375°F (190°C).
  2. Pat the cod fillets dry with a paper towel and season both sides with salt, pepper, paprika, and garlic powder.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  4. Sear the cod for 1-2 minutes per side, just until lightly golden (it will finish cooking in the oven).

Step 2: Make the Coconut Lemon Cream Sauce

  1. In a small saucepan, melt butter or olive oil over medium heat.
  2. Add garlic and ginger, sautéing for 1 minute until fragrant.
  3. Pour in coconut milk, broth, lemon juice, and lemon zest, stirring well.
  4. Stir in honey and red pepper flakes (if using).
  5. Simmer for 3-4 minutes, allowing the flavors to blend.

Step 3: Bake the Cod

  1. Place the seared cod fillets in a baking dish.
  2. Pour the coconut lemon cream sauce over the fillets.
  3. Bake for 12-15 minutes, or until the cod is flaky and opaque.

Step 4: Serve & Enjoy

 

  1. Garnish with fresh parsley or cilantro.
  2. Serve over steamed rice, quinoa, or roasted vegetables.
  3. Drizzle with extra sauce and enjoy!
