  • 2 teaspoons tomato paste
  • 2 quarts beef stock
  • 1 cup flour (for dumplings)

  • 1/2 teaspoon sea salt (for dumplings)
  • 1 tablespoon butter (room temperature)
  • 1/3 to 1/2 cup milk

Instructions

  1. Chop all vegetables into uniform pieces: dice the onion, slice the carrots, cube the potatoes, and mince the garlic.
  2. In a Dutch oven over medium-high heat, add oil and brown the stew meat for about 5–7 minutes.
  3. Stir in onions, carrots, garlic, rosemary, salt, and pepper; cook until onions are translucent.
  4. Add tomato paste and beef stock; incorporate cubed potatoes and thyme. Bring to a boil, then reduce heat to low and let simmer for about 90 minutes.
  5. For dumplings: Combine flour, baking powder, sea salt in a bowl; mix in butter until crumbly. Gradually stir in milk until a soft dough forms.
  6. Drop spoonfuls of dumpling batter onto the stew's surface. Cover tightly and cook for an additional 20 minutes without lifting the lid.
  7. Serve hot, garnished with fresh herbs if desired.
