- 1 1/4 cups plus 1 Tbsp sugar, divided

- Preheat your oven to 350°F (175°C) and prepare two 12-cup muffin pans with liners.
- In a small bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice; set aside.
- In an electric stand mixer, combine pumpkin puree, vegetable oil, eggs, and sugar until well mixed.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- In a separate bowl, mix cinnamon and remaining sugar for topping.
- Fill muffin cups two-thirds full with batter and sprinkle with the cinnamon sugar mixture.
- Bake for 20-25 minutes until muffins are golden brown and a toothpick inserted comes out clean.
- Cool in pans for five minutes before transferring to a wire rack.
