  • 5 Roma tomatoes (peeled and sliced)
  • 10 fresh basil leaves (roughly chopped)
  • 1/2 cup red onion (chopped or thinly sliced)
  • 1 pre-baked deep dish pie shell
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 3/4 cup mayonnaise
  • 2 tbsp shredded Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the tomatoes by layering them in a colander sprinkled with salt for 10 minutes to drain excess moisture. Pat dry with a paper towel.
  2. In the pie shell, layer the drained tomato slices, followed by chopped basil and red onion. Season with salt and pepper.
  3. In a mixing bowl, combine mozzarella cheese, cheddar cheese, and mayonnaise until creamy.
