Ingredients
- 1 sheet of puff pastry (store-bought or homemade, thawed if frozen)
- 2 medium tomatoes, thinly sliced
- 1/4 cup grated mozzarella cheese (or a cheese of your choice)
- 1 tablespoon olive oil
- 1 teaspoon dried oregano (or Italian seasoning)
- Salt and pepper to taste
- Fresh basil leaves, chopped (for garnish)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C).
Step 2: Prepare the Puff Pastry
- Roll out the puff pastry sheet on a lightly floured surface.
- Cut the pastry into 4 equal squares (or circles if you prefer) using a knife or a cookie cutter.
- Place the pastry pieces on a baking sheet lined with parchment paper.
Step 3: Add the Tomato and Cheese
- Use a fork to lightly score a border around each puff pastry square, about 1 inch from the edge. This will help the edges rise during baking.
- Brush the inside of each pastry with olive oil, then sprinkle with a little salt and pepper.
- Place a few slices of tomato on top of each pastry, making sure to stay inside the scored border.
- Sprinkle the grated mozzarella cheese over the tomatoes, then sprinkle with oregano (or Italian seasoning).
Step 4: Bake the Tartlets
- Bake the tartlets in the preheated oven for 15-20 minutes, or until the puff pastry is golden brown and puffed up, and the cheese is melted and bubbly.
Step 5: Garnish and Serve
- Remove the tartlets from the oven and let them cool slightly.
- Garnish with freshly chopped basil leaves before serving.
Notes
- Use Ripe Tomatoes: For the best flavor, use ripe, juicy tomatoes. Heirloom tomatoes work beautifully, but any ripe variety will do!
- Customize the Cheese: If you prefer a different cheese, try goat cheese, feta, or Parmesan.
- Make Ahead: You can prepare the puff pastry bases ahead of time and store them in the fridge. Just assemble and bake when you’re ready to serve.
