Ingredients

Scale

For the Graham Cracker Crust:

  • 1 ½ cups graham cracker crumbs – For that perfect crust crunch.
  • ¼ cup granulated sugar – To sweeten the crust.
  • 6 tablespoons unsalted butter, melted – To bind the crumbs together.

For the Key Lime Filling:

  • 1 can (14 oz) sweetened condensed milk – For the creamy base.
  • 1/3 cup freshly squeezed lime juice – The key ingredient for that signature tang.
  • 1 tablespoon lime zest – For an extra burst of lime flavor.
  • 1 large egg yolk – To give the filling a smooth consistency.
  • ¼ teaspoon salt – To balance the flavors.

For the Whipped Cream Layer:

  • 1 cup heavy whipping cream – For a light and airy topping.
  • 2 tablespoons powdered sugar – To sweeten the cream.
  • 1 teaspoon vanilla extract – For flavor.

Instructions

Step 1: Prepare the Graham Cracker Crust

  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the crumbs are fully coated.
  • Press the mixture into the bottom and up the sides of a 9-inch pie dish to form the crust.
  • Refrigerate the crust for 15 minutes to set.

Step 2: Make the Key Lime Filling

  • In a bowl, whisk together the sweetened condensed milk, lime juice, lime zest, egg yolk, and salt until smooth.
  • Pour the filling into the prepared graham cracker crust and spread it out evenly.
  • Refrigerate the pie for at least 3 hours to allow the filling to set.

Step 3: Whip the Cream

  • In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract using an electric mixer on medium speed until stiff peaks form.
  • Spread the whipped cream over the set key lime filling.

Step 4: Garnish and Serve

  • Optionally, garnish with extra lime zest or lime slices for decoration.
  • Serve chilled and enjoy!

Notes

  • Use Fresh Limes – Fresh lime juice and zest make all the difference in flavor.
  • Don’t Overmix the Filling – Overbeating the filling can cause it to be too thin. Mix gently and just until smooth.
  • Chill for Enough Time – Ensure the pie is thoroughly chilled before serving for the best texture.
  • Crust Tip – Press the crust firmly into the dish for a more stable base.
