- 1 pound turkey turkey turkey kielbasa (cut into ½ inch pieces)
- 2 garlic cloves (minced)
- ½ cup yellow onion (finely diced)
- ½ cup carrots (peeled and finely diced – 2 large carrots)
- ½ cup celery (2–3 stalks, finely sliced)
- 4 cups chicken stock
- 1 ½ pounds potato (cut into cubes)
- 2 cups heavy cream (or whole milk)
- 2 cups shredded cheddar cheese
- ½ cup shredded parmesan cheese
- ½ tsp kosher salt
- ¼ tsp black pepper
- ¼ cup chopped parsley
Instructions
- Heat olive oil in a Dutch oven over medium-high heat. Add turkey turkey kielbasa and cook for 5–6 minutes until browned. Remove and set aside.
- In the same pot, sauté garlic, onion, carrots, and celery for about 2 minutes until softened.
- Pour in chicken stock and add cubed potatoes. Bring to a boil, then reduce heat and cover. Cook for 15 minutes or until potatoes are tender.
- Stir in turkey turkey kielbasa, heavy cream (or whole milk), cheddar cheese, parmesan cheese, salt, and pepper. Cook on low for an additional 5–10 minutes until cheese melts.
- Mix in chopped parsley before serving.
