1 lb ground turkey sausage
-
2 tbsp unsalted butter
-
¼ cup all-purpose flour
-
2½ cups milk (whole or 2%)
-
1 tsp garlic powder
-
½ tsp onion powder
-
½ tsp salt (adjust to taste)
-
½ tsp freshly ground black pepper (or more for classic kick)
-
Pinch of paprika (optional)
For the Biscuit Topping:
-
2 cups all-purpose flour
-
1 tbsp baking powder
-
½ tsp baking soda
-
¾ tsp salt
-
6 tbsp cold unsalted butter, cubed
-
¾ cup buttermilk (plus extra for brushing)
Instructions
Step 1: Make the Turkey Sausage Gravy
-
In a large skillet, cook the turkey sausage over medium heat, breaking it into crumbles until fully browned.
-
Add butter to the pan and melt it with the sausage.
-
Sprinkle flour over the sausage and stir to coat evenly, cooking for 1–2 minutes.
-
Slowly whisk in the milk, stirring constantly to avoid lumps.
-
Add garlic powder, onion powder, salt, pepper, and paprika (if using).
-
Bring to a gentle simmer and cook until thickened, about 5–7 minutes.
-
Remove from heat and pour into a greased 9×13 baking dish.
Step 2: Prepare the Biscuit Topping
8. Preheat oven to 400°F (200°C).
9. In a large bowl, mix flour, baking powder, baking soda, and salt.
10. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
11. Stir in buttermilk just until dough comes together—don’t overmix.
12. Turn dough onto a floured surface and gently pat into a rectangle about ¾ inch thick.
13. Cut into 9 squares or use a round biscuit cutter.
Step 3: Assemble & Bake
14. Arrange biscuits on top of the sausage gravy in the baking dish.
15. Brush tops with a little buttermilk for a golden finish.
16. Bake uncovered for 22–25 minutes, or until biscuits are golden and cooked through.
17. Let cool for 5 minutes before serving.
Step 4: Serve & Enjoy
18. Spoon generous portions into bowls or plates, making sure to get plenty of that creamy gravy under each biscuit.
Notes
Keep Butter Cold – Cold butter makes the flakiest biscuits.
Don’t Overwork Dough – Gentle mixing keeps the biscuits light and tender.
Spice It Up – Add red pepper flakes or chopped jalapeños to the gravy for a spicy version.
Short on Time? – Use refrigerated biscuit dough in a pinch (adjust baking time as needed).
Make Ahead – Prepare gravy and biscuit dough separately, refrigerate, and assemble just before baking.
