  • 4 salmon fillets (about 6 oz each): Fresh or frozen (thawed) work great.
  • 1 teaspoon salt: Enhances the flavor.
  • ½ teaspoon black pepper: Adds a slight kick.
  • 1 teaspoon Italian seasoning: A blend of herbs for a Tuscan touch.
  • 1 tablespoon olive oil: For searing the salmon.
  • 2 tablespoons butter: Adds richness to the sauce.
  • 3 cloves garlic, minced: For bold, aromatic flavor.
  • ½ cup sun-dried tomatoes, chopped: Adds a slightly sweet and tangy taste.
  • 1 cup fresh spinach: Gives a fresh, earthy balance to the creamy sauce.
  • 1 cup heavy cream: The base of the luscious sauce.
  • ½ cup grated Parmesan cheese: Melts into the sauce for a creamy, cheesy finish.
  • ½ cup chicken broth: Helps thin out the sauce slightly.
  • ¼ teaspoon red pepper flakes (optional): For a hint of spice.

Instructions

Step 1: Sear the Salmon

  1. Season the salmon fillets with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Place the salmon fillets skin-side down and sear for 4-5 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.

Step 2: Make the Parmesan Cream Sauce

  1. In the same skillet, reduce heat to medium and add butter.
  2. Stir in the minced garlic and cook for 30 seconds until fragrant.
  3. Add the sun-dried tomatoes and sauté for 1 minute.
  4. Pour in the chicken broth and let it simmer for 2 minutes.
  5. Stir in the heavy cream, Parmesan cheese, and red pepper flakes (if using). Let it simmer for 2-3 minutes until slightly thickened.

Step 3: Add the Spinach & Salmon

  1. Add the fresh spinach and stir until wilted.
  2. Return the salmon fillets to the skillet and spoon the creamy sauce over them.
  3. Let everything simmer together for 2 minutes so the flavors meld.

Step 4: Serve & Enjoy

  1. Remove from heat and serve warm with pasta, rice, or crusty bread.

Notes

Use Fresh Salmon – It gives the best flavor and texture. If using frozen, thaw completely before cooking.
Don’t Overcook the Salmon – Remove from heat once it reaches an internal temperature of 145°F (63°C).
Adjust the Sauce Consistency – If the sauce is too thick, add more chicken broth. If it’s too thin, let it simmer longer.
