  • 2 ¼ teaspoons active dry yeast (1 packet)
  • ¾ cup warm milk (about 110°F/45°C)
  • ¼ cup sugar
  • 2 eggs
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3 ½ cups all-purpose flour
  • ½ teaspoon salt
  • Vegetable oil (for frying)
  • ½ cup powdered sugar (for dusting)

Instructions

Step 1: Activate the Yeast

  1. In a small bowl, mix warm milk, yeast, and sugar. Let it sit for 5-10 minutes until foamy.

Step 2: Make the Dough

  1. In a large bowl, whisk together eggs, melted butter, and vanilla extract.
  2. Add the yeast mixture and stir to combine.
  3. Gradually add flour and salt, mixing until a soft dough forms.
  4. Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-2 hours, or until doubled in size.

Step 3: Shape the Beignets

  1. Roll out the dough on a lightly floured surface to about ¼-inch thickness.
  2. Cut into 2-inch squares or rectangles using a sharp knife or pizza cutter.

Step 4: Fry the Beignets

  1. Heat 2-3 inches of vegetable oil in a deep pot to 350°F (175°C).
  2. Fry the beignets in batches for 1-2 minutes per side, until golden brown.
  3. Remove with a slotted spoon and drain on paper towels.

Step 5: Dust and Serve

    1. While still warm, dust generously with powdered sugar and serve immediately

Notes

  • Make sure the milk is warm (not hot) to properly activate the yeast
  • Let the dough rise fully for a light and airy texture
  • Don’t overcrowd the fryer, as it will lower the oil temperature
  • Use a thermometer to maintain the right frying temperature for even cooking
