  • 1 Tbsp olive oil
  • 3 large garlic cloves (minced)
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • ¼ tsp chili flakes
  • 2 cans chickpeas (15 oz each)
  • 1 large potato (diced)
  • 2 cups low-sodium vegetable broth
  • Salt & black pepper (to taste)

Instructions

  1. In a blender, purée one can of chickpeas with its liquid until smooth.
  2. Heat olive oil in a pot over medium heat, then sauté minced garlic for about 1 minute.
  3. Stir in the puréed chickpeas and the second can of drained chickpeas along with diced potatoes, spices, and freshly cracked pepper.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to simmer for about 25 minutes.
  5. Taste and adjust seasonings before serving hot, garnished with pepper and olive oil drizzle.
