  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (or 1/2 small celery root, diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth (or water)
  • 1/3 cup dairy-free cream
  • Fresh parsley (for garnish)

Instructions

  1. In a large pot, heat oil over medium heat. Sauté diced onion for three minutes until translucent.
  2. Add minced garlic, chopped celery, diced carrots, and potatoes; cook for one more minute until fragrant.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes until vegetables are tender.
  4. Carefully blend half of the soup until smooth using an immersion blender or regular blender.
  5. Return blended soup to the pot and stir in dairy-free cream; simmer together for a few minutes.
  6. Taste and adjust seasonings with salt and pepper as needed.
  7. Serve hot, garnished with fresh parsley.
